Bay leaf are used to add depth and flavour to Indian food like biryani and curry as well as non indian food like pasta sauces. When cooking with bay leaves one or two medium bay leafs are enough to flavour.

Tear the bay leaf into large pieces, the torn edge imparts the flavour to your cooking.
