Season:
Coat lightly with vegetable oil or olive oil using a pastry brush or paper towel. Place over a low heat for 20 minutes. Let the pan cool and store it. Repeat this procedure for the first 10 -12 uses to build up a more nonstick finsh.
To check that the surface is hot , scatter a few drops of cold water over the surface. If they gently hiss, the surface is not hot enough. If they spit and evaporate almost immediately, the surface is hot enough.
Do not preheat on high then lower the heat. Cast iron is a very efficient material and retains heat well.
To Clean:
Let the pan cool for a few minutes before washing. Then pourhot tap water on the pan and let it boil out the residue of the prepared food. Wash in hot soapy water with nylon brush or pad. Do not use abrasive cleaners or metal cleaning pads. Rinse with warm water and dry.
