Mulligatawny Soup
Ingredients required:
250g lamb or beef
5-6 cups stock
2 cups coconut milk
2 small onions
2 medium tomatoes
3 tsp ferns mulligatawny
1/2 tsp ginger & garlic paste
2 lemons
few curry leaves
salt to taste
Method:
cut even cubes of lamb and cook seperately in 2 cup stock. Melt butter in a pan, Add ginger & garlic paste and stirfry for a few seconds. Add chopped onions, tomatoes, ferns paste and curry leaves. Add 3 cups stock and cook until vegetables are tender. Add lamb pieces, coconut milk, salt and simmer for 20mins. Adjust the seasoning and serve hot with a dash of lemon juice.
