Recipe: Szechuan Prawns

Ingredients:

  • 450g Tiger Prawns, peeled
  • 1 Tbsp egg white, beaten
  • 1 Tbsp corn flour paste
  • 3 Tbsp cooking oil
  • 1 tsp garlic, chopped
  • 1/2 tsp ginger, chopped
  • 1 Tbsp rice wine or dry sherry
  • 1 tbsp Light Soya Sauce
  • 1 tbsp YEO'S Hot Bean Sauce
  • 1 Tbsp spring onions, finely chopped
  • 1/2 tbsp Pure Sesame Oil
  • Garnish with lettuce leaves, shredded and fresh coriander leaves
  1. Coat the prawns with egg white and corn flour paste.
  2. Heat the oil and stir-fry the prawns with garlic and ginger for about 1 minute.
  3. Add the wine, Light Soya Sauce and YEO'S Hot Bean Sauce and continue stirring for 2-3 minutes, adding a little stock or water if necessary.
  4. Finally, add the spring onions and Sesame Oil, blend well and serve hot on a bed of lettuce leaves.
