Japanese Buckwheat (Soba) Noodles

Popular dark, thin noodles traditionally from the north of Japan. These are very popular in Tokyo. Easy to prepare, try as part of a stirfry, accompaniment or in soups. Made from buckwheat and wheat these are served stirfried or chilled. Contains gluten.
To prepare: add slowly to a large deep pan of boiling water, return to the boil and simmer for approx 4-5 mins. Noodles should be cooked through to the centre but still quite firm. Drain and serve immediately.
