Shan Malay Chicken Biryani [mix for malaysian style spicy chicken pilaf]
Recipe: Malay Chicken Biryani - Ingredients required: chicken 750g, basmati rice 600g washed/soaked, tamarind 50g soaked in 1 cup water and sieved to retain tamarind juice, onion 200g, ginger paste 2tbsp, garlic paste 2 tbsp, curry leaves 50 leaves, green chilli 10-15, cucumer 150g, ghee/oil 250g, shan malay biryani mix one packet.
Method: 1] in pan, apply ginger, garlic and 2 tbsp of shan mix to the chicken and marinate for 1 hour. 2] add half cup water and cook covered on low heat until meat tender. Then increase heat to dry liquid. 3] add ghee/oil and fry the boiled chicken on high heat till brown, stir. Remove chicken and fried masala from the pot. 4] in same ghee add onions fry unyil light golden, add green chilli and curry leaves, shan malay biryani mix, tamarind water, and 1 cup water. Fry for a few mins - keep stirring. 5] add fried chicken pieces cucumber and cup of water, cook for few mins and remove from heat. 6] Seperately, boil 10 glass water with 2 tbsp salt and add soaked rice. Boil until rice is three quarters tender. Drain water. 7] spread the rice and cooked meat curry in layers. Cover and cook till rice is tender. Mix before serving.
