SUSHI - Japanese Sushi Rice | Yutaka


Sushi Rice

Medium grain sushi rice ideal for making sushi and for accompanying all oriental dishes.

Japanese rice is a medium-grained rice and gets sticky when it is cooked. The long-grained American rice is not suited for sushi because it is drier and doesn't stick together.

What You Need to cook rice:

  • 2 cups Japanese-style rice
  • 2 1/2 cups water
  • Pan/Rice Cooker

Method to cook rice:

  1. Put the rice in a bowl and wash with cold water.
  2. Repeat washing until the water becomes clear.
  3. Drain the rice in a colander and set aside.
  4. Place the rice in a pan or rice cooker and add water.
  5. Use just enough water to cover the rice -- don't fill the entire pot.
  6. Let the rice soak in the water at least 30 min. One hour is ideal.
  7. If you are cooking the rice in a pan, cover the pan with a lid and bring to a boil over high heat.
  8. Once the water boils, turn the heat down very low and cook about 15-20 min. until the water is almost gone.
  9. Remove the pan from the heat and let it steam for 10-15 minutes before serving.

Tips:

  1. If you are using an electric rice cooker, you don't have to worry about adjusting the heat. You still need to let the cooked rice steam before you open the lid.
  2. Japanese rice gets sticky when it is cooked. The long-grained American rice isn't proper for Japanese cooking, because it is drier and doesn't stick together well.

What You Need for preparing Sushi vinegar for Sushi Rice:

  • 1/3 cup rice vinegar
  • 2 tbsps sugar
  • 1 tsp salt
  • 3 1/4 cups water
  • Make sushi vinegar (sushi-zu) by mixing rice vinegar, sugar and salt in a pan. Put the pan on low heat and cook until the sugar dissolves.
  • Cool the vinegar mixture.
  • Spread the cooked hot rice into a large plate (if you have it, use a wooden bowl called sushi-oke) by spatula
  • Sprinkle the vinegar mixture over the rice and fold the rice very quickly. Be careful not to smash the rice.
  • To cool and remove the moisture of the rice well, use a fan as you mix sushi rice. This will give sushi rice a shiny look.
  • The sushi rice is ready! It's best to use it right away.

     Tips for Making Sushi Rice

    • Add vinegar mixture to the rice when the rice is still hot.
    • Cool the rice quickly using a fan so that it will look shiny.
    • Use a spatula to mix the rice, using a cut and fold motion so that you don't smash the rice grains.
