Flat bamboo sushi rice paddle [called shamoji] is used in the preparation of sushi as they are less harsh on the soft rice grains. Standard metal spoons can break up these delicate grains during mixing. Use for mixing rice vinegar and sushi rice. And for lifting the seasoned rice onto your sushi nori and its flat surface is perfect to then spread as required. Clean with warm soapy water.
