Thai Red Curry Paste [Vegetarian]

In thailand curries are prepared with a spicy paste made from fresh ingredients rather than a powdered base. To make a meat curry for 4, fry 2 tbsp of lotus red curry paste in a little oil with 300ml of coconut milk or water. Add 450g of chicken, meat or prawns and season with 2 tbsp of fish sauce or soya sauce. Bring to the boil and simmer for 35-40 mins for chicken, 10-15 mins for prawns, adding more liquid if necessary.

Use 1tbsp max [10g paste] for each medium average serving dish [360g ingredients]

Ingredients: sunflower oil, water, dried red chilli, salt, ginger, garlic, galangal, lemongrass, shallot, sugar, kaffir lime peel, coriander seed, coriander root, cumin, cardamon seed, pepper, acidity regulator citric acid.
