Bonito Flakes are ideal for soups, with miso, hot pots, soba & udon noodles and toppings.

How to make Katsuobushi [Bonito] stock:
  • Bring 1000ml water to the boil in a saucepan. Add 40g fresh Katsuobushi Bonito flake to the boiling water.
  • Simmer for 1 min. Turn off the heat and wait for a few mins until the Katsuobushi Bonito settles down in the bottom of the saucepan. Drain Bonito through a sieve. You can wring out and reuse the Katsuo bushi Bonito up to 24 hours later to make a second batch of stock. Store in fridge before making second batch of stock.
  • Tip: use less water for a stronger stock.
