Chinese Fermented Salted Black Beans

These Fermented salted black beans are small, black soybeans that have been preserved in salt. Also known as Salty Chinese black beans or salted black beans, they have a distinctive, salty flavour.

They have a very pungent smell and are used sparingly. Salted black beans are widely used in Chinese cooking. Always rinse the black beans well before using to remove the excess salt and soak for about half an hour or so in water before adding to a dish.

Store the beans away from light in a cool place

Fermented black beans are not the same thing as black bean sauce (which is a sauce produced from these), although you can substitute the sauce with a tiny touch of the beans.

Store in a sealed container in a cool dark place.
