Lamb Rogan Josh

• heat 3 tbsp oil in a pan and add 1 medium diced onion, fry until soft.
• add 1 tsp finely chopped ginger, 1 tsp finely chopped garlic, 1 tbsp tomato puree and 1/2 jar of Pataks Rogan paste, cook for 1-2 mins, add 50ml water and cook until water has evaporated.
• remove from heat, stir in 1 tbsp yoghurt, return to heat, add 500g diced lamb, cook until sealed, add 150ml water and simmer covered until lamb is tender.
• add 200g chopped tomatoes and simmer uncovered for 10mins, season to taste, garnish and serve with rice and naan.
