Harissa is a hot chilli sauce with a red pimento base which enhances the flavour of many dishes and hot or cold sauces. It should be liberally diluted in the broth of the sauce. Harissa is an essential complement to couscous.

Ingredients: red hot peppers, garlic, coriander, salt, caraway, citric acid.
