A stronger fermented fish sauce from the Philippines.

Usages:

  • As a fish stock: prepare by using 2 tbsp monamon to 1/4 cup of water, cook to simmer, then strain to remove fish bones and bits. Add to steam vegetables to make Philippine Pinakbet.
  • As a dipping sauce: add calamansi juice to produce a salty sour taste. Ideal for frilled seafood, steamed vegetables or as a salad dressing.
