Shan Yakhni Pilau Biryani Spice Mix

Delhi style pilaf:
mutton/beef/chicken - 500-750g small cubes.
basmati rice - 500-750g washed and soaked for 30mins.
ginger paste - 1 tbsp.
garlic paste - 1 tbsp.
onion - 1/2 sliced.
plain yoghurt - 1 cup whipped [200g]
milk - 1/2 cup
ghee/oil - 1 cup/175g.
shan pilau - one packet.
Steps of cooking:
- in 1-2 glasses of water add meat, ginger, garlic and shan mix - cover and boil on low heat until meat is tender [when meat is tender there should remain about 1 cup of stock in pot, if less add water or if more increase heat to reduce]
- pour yoghurt over cooked meat.
- seperately in 12 glasses of boiling water stir in 2 tbsp shan salt and then add soaked rice - boil the rice until more than half cooked - remove from heat and drain - then mix milk in the rice.
- spread rice over the meat - sprinkle the dry food colour over it - make the ghee hot and fry sliced onion until golden - sprinkle over rice - cover and cook on low heat until rice is tender - mix the meat rice before serving.
Ingredients: salt, coriander, ginger, black pepper, brown cardamom, green cardamom, cumin, bay leaf, cinnamon, clove, red chilli, garlic, black cumin, citric acid, maltodextrin, hydrolyzed soy protein, cane sugar, canola oil, silicondioxide, dried papaya powder.
